I was diagnosed as Celiac 4 years ago. Initially, I had a great deal of difficulty going gluten free as I didn't believe it would make a difference in my life. For the first year after my diagnosis, I cheated and often ate gluten and diary. I think if I had someone that was supportive and understanding and helped educate me on the damage that had been done to my body, I'd have been more likely to stop eating gluten and dairy sooner. I understand how hard it can be to give up foods that you enjoy eating.
