This is not a Filipino Recipe but it's still one of my favorites and this could easily be a Filipino recipe since all the ingredients are commonly found in the Philippines.
Baked Eggs in Avocado or as I like to call it, Baked Avocado Egg Boat has got to be one of the easiest and healthiest breakfast recipe I've discovered in life. I found this little gem in a magazine one day and had to cook it. My mom I think enjoyed the fact that I actually wanted to cook something but boy was it delicious!
It's a wonderful dairy free, gluten free, paleo recipe! It's simple to make and with only two ingredients and a few toppings, I'm certain you already have a majority of the ingredients on hand. I hope you enjoy this recipe as much as I did!
